Cranberry Relish

I canned Cranberry Relish! I know you are thinking, "I don't like cranberry relish"! This is only because you have never tried my Mom's. It is.........amazing! I make it every year, and we practically drink it (Humm...It might make a good drink at that....a little sprite....)! I wanted to send some up to Alicia for Thanksgiving and wasn't sure how to send it, then I thought maybe I could can it. So I did!

To tell the truth, I have never had the stuff you buy in a can. That jelly stuff that is shaped just like the can and sliced to put on your meat. Maybe, I am missing something. I will probably never know unless someone makes me try it because I love this stuff. Here is how it is made.(OOOO Karen is giving away the secret family recipe!!!!) First you freeze a bag of fresh cranberries. Then dump half of them at a time into a blender or food processor and chop the heck out of them. Then put it in a pan with a can of crushed pineapple. It does not matter if it is in juice or syrup, you will see why in a minute. As this heats, start adding sugar. How much? you ask? well that all depends. How much do you feel like adding? Some years I'm good and only add a cup or two, delicious. Other years I am not so good and,as my mother would have, I add five or six cups, delicious also! Just get it hot enough to disolve the sugar and no one will ever have to know how much you put in. Put it in the refrigorator and keep it cold and ready to put on your slices of turkey. You will never be able to say you don't like it again. Your children will love it because it is like eating adult approved candy.

One more week! YUM!!

I remmeber my first Thanksgiving with you guys. Your Mom came at me with a spoon and told me to open. I had no idea what she was putting in. It was yummy though.

Who didn't hate that spoon with the unidentifiable food substance on it? Was it going to be salty? Sweet? Sour? You never knew. I only fell for that a couple of times. Although, she was a pretty fabulous cook most of the time, it was those rare other times you had to watch out for though!
Also? I can definitely suffer through scary stuffing if I have real-honest- to-goodness-sweeter-than-anything cranberry relish! Thanks mom!
