Today I canned Cucumbers! I have always wanted to try making pickles. The hard part is getting the right cucumbers. My Sis Jennifer called me and had a lead on some, I jumped online and quickly ordered three boxes, wait...three may be to many, I'll just get two. Then my computer freaked out and I couldn't order any! Suddenly, it came back with the three ordered so, not wanting to miss out on getting any at all, I went ahead with the three. I picked them up this morning...... Wow! Three boxes of little cucumbers is a whole lot! I called Dixie(Who works in my shop with me) and told her I was "in a pickle", pun intended. She rushed over to help me with my problem. Jennifer also came to the rescue. We worked all morning and into the afternoon. We made dill wedges, dill slices (three different kinds), and sweet relish. I now have 51 quarts and 26 pints of pickles, and have yet to pack the pints of relish. The relish is still soaking in salt, then watter, then sugar, to be canned tomorrow! I am so tired, my feet are killing me, my house is such a mess and I haven't even started on my usual Saturday list. I am sure going to sleep well tonight. As I type this I keep hearing the sweet sound of jars popping as they seal in the kitchen. I hope they taste good. I am afraid, like Aunt Bee on Andy Griffith, they will taste like Kerosene and my family will hate them. Russ will be handing them out to the ward members,trying to get rid of them. I won't know for a week so I will try and let you know. If nothing else, it is one more thing off my list of things to do in my life!
